Ingredients

- 2 tablespoons cannabis-infused sesame oil

- 1 red bell pepper, sliced thin

- 1 yellow bell pepper, sliced thin

- 1 medium zucchini, julienned

- 1 large carrot, julienned

- 1 small onion, sliced

- 2 cloves garlic, minced

- 1 tablespoon fresh ginger, grated

- 1 cup snap peas

- 1/4 cup soy sauce

- 1 tablespoon honey

- Juice of 1 lime

- 1/4 cup fresh Thai basil leaves, chopped

- 2 tablespoons roasted peanuts, for garnish

- Cooked rice or noodles, to serve

Preparation

1. Heat the cannabis-infused sesame oil in a large wok or skillet over medium-high heat.


2. Add the garlic, ginger, and onion, and stir-fry until aromatic, about 1 minute.


3. Add the bell peppers, zucchini, and carrots to the wok, and stir-fry for 3-4 minutes until just tender.


4. Add the snap peas, soy sauce, honey, and lime juice. Continue to stir-fry for another 2 minutes until the vegetables are cooked but still crisp.


5. Remove from heat and stir in the Thai basil leaves.


6. Serve hot over rice or noodles, garnished with roasted peanuts.
