Ingredients
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- 1 tablespoon red chili flakes
- 1/2 cup cannabis-infused olive oil
- 2 cups spicy arrabbiata sauce
- 1 cup smoked mozzarella cheese, shredded
- Chopped parsley for garnish
Preparation
1. Preheat oven to 375°F (190°C).
2. Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in breadcrumbs mixed with red chili flakes.
3. Heat cannabis-infused olive oil in a skillet over medium heat. Fry chicken until crispy and golden on each side.
4. Transfer fried chicken to a baking dish, cover each piece with arrabbiata sauce, and top with smoked mozzarella.
5. Bake for 25 minutes, until the cheese is melted and slightly browned.
6. Garnish with chopped parsley before serving.
