Ingredients
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 1/2 cup cannabis-infused pesto
- 1/2 cup olive oil for frying
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh arugula and shaved Parmesan for garnish
Preparation
1. Preheat the oven to 375°F (190°C).
2. Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in panko breadcrumbs.
3. Heat olive oil in a skillet over medium heat. Fry the chicken until golden on both sides.
4. Spread a thin layer of cannabis-infused pesto over each fried chicken breast.
5. Place in a baking dish, cover with marinara sauce, and sprinkle with mozzarella cheese.
6. Bake for 20 minutes, until the cheese is melted and bubbly.
7. Serve garnished with fresh arugula and shaved Parmesan.
