Ingredients
- 1 tablespoon cannabis-infused olive oil
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1/2 cup rice
- 2 cups shredded cooked chicken
- 3 tablespoons fresh dill, chopped
- Juice of 1 lemon
- Salt and pepper, to taste
Preparation
1. In a large pot, heat the cannabis-infused olive oil over medium heat. Add the onion, carrots, and celery, and sauté until tender.
2. Add the chicken broth and bring to a boil. Stir in the rice, reduce heat to low, and simmer until the rice is tender, about 18 minutes.
3. Add the shredded chicken, dill, and lemon juice. Season with salt and pepper to taste.
4. Cook for an additional 5 minutes, or until everything is heated through.
