Ingredients
- 2 cups all-purpose flour, plus more for dusting
- 1 tablespoon baking powder
- 1 teaspoon salt
- 6 tablespoons cold, unsalted butter, cubed (plus extra for brushing)
- 2 tablespoons cannabis-infused butter, cold, cubed
- 3/4 cup whole milk or buttermilk
Preparation
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, sift together the flour, baking powder, and salt.
3. Add the cold unsalted butter and cannabis-infused butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
4. Make a well in the center of the flour mixture and pour in the milk. Using a fork, stir until the mixture just comes together into a slightly sticky dough.
5. Turn the dough out onto a lightly floured surface. Gently knead the dough by folding it over itself and pressing it down 3-4 times.
6. Roll the dough out to about 1 inch thick, then use a biscuit cutter or a glass to cut out biscuits. Press together the scraps and continue cutting until all the dough is used.
7. Place the biscuits on the prepared baking sheet, ensuring they touch each other (this helps them rise uniformly).
8. Bake for 12-15 minutes or until golden brown. Brush the warm biscuits with melted butter if desired.
